Chicken kofta

Online school is still going strong, and with the numbers of new cases, it seems that we might end up with a full online semester not just a couple of weeks. With two kids at home, attending classes from 8 to 2. I find myself falling back on quick and easy recipes. Ones that I can prepare the night before or ones that I can quickly whip up without creating too much noise during the day. Today’s chicken kofta is one of those recipes.

It is super quick and easy to prepare. Just pulse everything in the food processor, form into long thin logs or patties, grill and serve.
The smell alone is truly worth it!
The combination of the garlic and ginger notes playing against the freshness of the parsley and the warmth of the spices is simply irresistible.

Mix and match with salads, dips and veggies or wrap into a sandwich with tahini sauce, lots of fresh mint and juicy tomatoes😋

One of my resolutions this year has been to post regularly. The plan was to post a new recipe every Sunday. I barely made it today! If you check out the time stamp for this recipe, it is 11.59pm lol in my defence, Jordan had a two-day snowstorm this past week and the time that was dedicated to writing this post over the weekend was spent building snowmen and having snowball fights 🙂
The other part of the posting resolution was to post a (food for thought) post every Wednesday. The series started out as an attempt to share wordless Wednesday pictures but then sticking to the (wordless) part turned out to be a challenge! So I decided to make it a fun twist on two things that I enjoy. Photography and inspirational quotes. I would love to hear what you guys think of the series so far.

Chicken Kebab

Chicken Kofta

500 g boneless chicken breasts
1 medium onion
1 cup packed parsley
2 cloves garlic
1 teaspoon ground all spice
1 teaspoon paprika
1 cm ginger
1/2 teaspoon cumin
1 teaspoon salt
3/4 up to 1 cup bread crumbs

Place everything in the food processor, pulse till homogenous
Form into logs
Brush with olive oil (optional)
Grill (I usually do it on a small electric grill)
Enjoy
